Saturday: Brunch, Shopping, and Literature

I’ve made my love for Brunch quite clear. In fact, it gets to be capitalized, because it’s that important to me. I love that I’m able to get a hearty meal even after I sleep in. The early bird catches the worm? Yes. But the girl who finally gets to sleep in on the weekend catches the Brunch! ;)

J and I headed over to our favorite little spot down the street. We ordered our normal meals, as usual! I ordered a breakfast quesadilla with a side of fruit instead of rice and beans. He ordered Cowboy Steak, which was a massive, well-done steak, fried potatoes with onions and bell peppers, and a biscuit and gravy. Needless to say, we couldn’t walk properly after eating! Whenever meals are big, I pack up leftovers for the next meal. If you’re worried you’ll overeat, ask your waiter to pre-pack half your meal before bringing it out!

I had some things to return to CostPlus World Market, which should’ve taken five minutes, but actually took thirty. I get so carried away in there; it sure is dangerous! I found this wine bag at CostPlus; why it was in the Clearance section, I’m not sure. I’d buy these for all my friends’ gifts…

We then found ourselves at HomeGoods afterwards, which, oddly, I had never been to before. I was blown away by the selection and immediately wanted to remodel everything. A travel themed room? What about an automobile room? Or a beach theme? The possibilities are endless. My money? Maybe not so much…

I finished up #GirlBoss afterwards and felt so invigorated. It’s been a long time since I’ve been able to read for pleasure and my goodness, #GirlBoss was the perfect book to dive back into! For those who haven’t read it, I highly suggest you do so. I’ve never felt so empowered, motivated, or determined to succeed. Thanks Sophia! Stay tuned for a thorough review of the book. You can purchase the book at Amazon here.

Homemade Burgers

I’ve never barbecued as much as I have this summer…but I love it! I’ve been firing up the grill at least twice a week to make chicken, potatoes, fajitas, burgers, etc. The list goes on and on.
Due to the increasing price of quality burgers (both beef and turkey), we decided to experiment and make our own burgers. It was great being able to personalize them to our own personal taste and we saved a lot of money. We didn’t just add condiments and toppings, but actually manipulated the actual meat itself.
I don’t eat beef, so I stocked up on minced turkey meat. I also bought beef for the boys.

Our additions included jalapenos, mushrooms, cilantro, and pepperjack cheese. Other possible inclusions are spinach, feta cheese, basil, Parmesan cheese, or onions.

Roll the desired amount of each addition into the ball of meat. Press with a hamburger molder. Grill until fully cooked. Top with cheese, lettuce, tomatoes, onions, and light mayo!

These were a real treat and I loved having the power to personalize my turkey burger. We wrapped the extra patties in parchment paper and froze them in Ziploc bags. Throughout the week we grabbed them from the freezer and threw them on the George Foreman grill for about five minutes. They tasted just as great, so I recommend making extras!

What ingredients would you add into your burger meat?

CTM Burger

Cilantro Turkey Mushroom Burger

Sometimes, just the tiniest addition to your meal can make all the difference. Cilantro is a perfect example of this. It’s versatile and can be used in salads, burritos, and even burgers!

I grilled up a turkey burger on the George Foreman grill. Turkey doesn’t grill the same as beef, so make sure you’re paying special attention to when it’s finished cooking. I added in white cheddar cheese, sliced tomatoes, chopped mushrooms, spinach, and a small amount of mayo on a whole wheat hamburger bun. I don’t eat red meat, so I love experimenting with new ways to top my turkey burgers. The cilantro was a perfect addition and gave it quite a zing, and I’m sure many more CTM Burgers (Cilantro-Turkey-Mushroom) will be made in the future!

-One turkey burger (I used Kirkland brand from Costco)
-Three sliced tomatoes
-One slice of cheese
-One handful of spinach
-One handful of cooked mushrooms
-Two pinches of cilantro

How do you like your burgers?

I’m working really hard on drinking more water.  I have started taking water bottles everywhere in an effort to help flush toxins out of my body, cleanse my skin, and help digestion. It’s especially important to drink tons of water when the weather gets hot and fry.

J bought a cute mason jar to fill up water for me. I decided to try some water infused with fruits to give it an extra kick. I used cut strawberries (and later limes), but will also do oranges and lemons! It isn’t supposed to taste like fruit juice, but rather a slightly sweeter tasting water.

I had some cut up watermelon as a snack. I cut it into cubes and throw it in a plastic container in the fridge so that I can easily grab it and go whenever I please. It’s perfect for bite size snacking.

What’s your favorite way to get some extra hydration in during the summer?
